In a small bowl stir together:

¾ cup unbleached flour

¼ cup White Earth Wild Rice Flour

1 tablespoon baking powder

1 tablespoon brown sugar

In a large bowl beat together:

1 egg

¾ cup milk

¼ teaspoon salt

1 teaspoon oil

1 teaspoon vanilla

(Stirring in Fruit like banana optional)

Stir the dry ingredients into the milk mixture.  Stir just until the dry ingredients are moistened (batter will be lumpy)

Pour batter on a hot, nonstick griddle – ¼ cup batter for each pancake.  When pancakes are a little dry around the edges flip and cook for 1 minute on the other side.

Makes 8 pancakes (4 inches in diameter).  Serve warm with maple syrup.
