Wild Rice with Cranberries and Pecans
4 cups cooked White Earth Wild Rice
2 tablespoons olive oil
1 carrot, finely chopped *
2 stalks celery, finely chopped*
1 cup chicken broth
1/4 teaspoon salt
1 medium onion, finely chopped*
1 teaspoon sage
1/2 cup dried cranberries (regular or cherry-flavored)
1/2 cup chopped pecans (Unsalted)
1. Heat the olive oil in a large skillet. Add the carrots, celery and onion, cook until they are tender.
2. Stir in the wild rice, salt, chicken broth and sage. Cover the skillet and cook over low heat until the rice is heated through.
3. Stir in the cranberries and pecans just before serving.
